Once known as the fruit of kings because they were only available to natives of the tropics and wealthy Europeans, pineapples are now a popular exotic fruit in the U.S. Pineapple is a member of the bromeliad family, in which edible fruits are rare. The process begins with a plant of about three feet growing a hundred or more flowers. Each flower develops one of the scales outside of the pineapple. The more scales or marks on a pineapple, the stronger the tropical flavors will be. Fruit with fewer or larger scales will have a milder but sweeter taste and more juice.
