Because it’s easy to keep pancake mix and syrup stocked in the pantry, this buttermilk waffle recipe today just may be the easiest thing you’ll ever whip up. In place of ordinary pancakes, you can make waffles with pancake mix, for this waffle recipe we used Harry & David’s Pancake Mix flavors. Exchange the water for buttermilk, and you have the most flavorful waffle that tastes as fresh as sourdough, with a crispiness on the outside.

Buttermilk Waffles with Pancake Mix Recipe
- 1 13 oz. package pancake mix
- 2 ½ cups buttermilk
- 3 Tbsp. oil
- 1 jar lemon curd
- 8 oz. mascarpone cheese
- Preheat waffle iron
- Mix ingredients together in a large bowl
- Coat waffle iron with butter, oil, or nonstick spray as necessary
- Cook waffles according to the manufacturer’s instructions for the waffle iron
Waffle Toppings that Inspire Flavor
Whip together lemon curd (we used Harry & David’s) with Mascarpone cheese, for an additional, beautiful touch. We might not have the time to churn our own butter, but there are some pantry staples you won’t need for this recipe—this curd/cheese mixture is fluffy and delightful.
The waffles turn out beautifully, especially topped with fresh lemon zest. So absolutely amazing, crispy, and light. Hello brunch!
