How to make waffles with pancake mix

Ingredients:

1 13 oz. package pancake mix 2 1/2 cups buttermilk 3 Tbsp. oil 1 jar lemon curd 8 oz. mascarpone cheese

Instructions:

  1. Preheat waffle iron
  2. Mix ingredients together in a large bowl
  3. Coat waffle iron with butter, oil, or nonstick spray as necessary
  4. Cook waffles according to the manufacturer’s instructions for the waffle iron
